Hi all. On one of these threads, someone mentioned they made soda bread...yum, I love that stuff, very filling. Anyone have a recipe to share?
Also I am curious, how many of you make sourdough bread from scratch? I remember as a kid my mom would always make it, and when I walked home from school, as soon as I stepped in the door it smelled so good. Any recipes to share?

Irish Soda Bread
To make one 8-inch round loaf
1/2 oz butter, softened
1 lb. plain flour [~420 g]
1 scant teaspoon bicabonate of soda
1 teaspoon of salt
3/8 to 5/8 pint buttermilk [~1 3/4 - 3 dl]
Preheat the oven to 425 F (220 C). Grease a baking sheet evenly with the softened butter, using a pastry brush.
Sift the flour, soda and salt together into a deep mixing bowl. Gradually add 3/8 pint of the buttermilk, beating constantly with a wooden spoon until the dough is firm enough to be gathered into a ball. If the dough crumbles, beat up to 6 tablespoons more buttermilk into it by the tablespoon until the particles adhere.
Place the dough on a lightly floured board, and pat and shape it into a flat circular loaf about 8 inches in diameter and 1 1/2 inches thick. Set the loaf on the baking sheet. Then cut a 1/2 inch deep X into the dough with the tip of a small knife, dividing the top of the loaf into "farls", or quarters.
Bake the bread in the centre of the oven for about 45 minutes, until the top is golden brown. Serve at once.

It worked well for me last Monday, and was lovely hot and crisp. It is best hot. I was alone so I had a lot of the bread left over...OK to eat the next couple of days but when cold it seemed more 'solid' than most bread you would buy.
I must admit this was easy to make.
My wife years ago made sourdough bread, but as I haven't done it I will let others tell you how they do it. _________________ We should teach our children the 4-Rs: Reduce, Reuse, Recycle and Rejoice.

Wild Yeast Soursough Bread:
You will need some high quality wheat and high quality water.
To make a started culture, add equal volumes of flour and water into a glass jar. Stir lightly. Leave the jar at a high elevation in the house with the lid covered in a way that allows ventilation and keeps dust and crap from falling in.
Once the culture is bubbly and sponge-like, add it into a mix of flour and water. Mash up the bread until it is consistant.
Bake. Duration depends on the size of the bread.
That's the most basic kind of bread. I like to add all kinds of things into it.
