CarlinsDarlin, if you have room in the freezer you can freeze a lot of them whole for processing later. The skins come off much easier that way too.

Or you can do what I like to do and dehydrate them. They taste wonderful after that, even ones that were on the soft or bland side before.

Thanks Kathy, I can't wait to try them-if I mess them up my kids can use them for batting practice (ha,ha)-good luck with the killer tomatoes-I'm about to head home and do the same!

Good tomato pointers and nice recipe! That's what I like to see. I think a recipe thread would be great, but I'm an obsessive cook. Anyone else?

Lots of tomato juice comes to mind, also I think I read somewhere about making tomato paste by oven-drying. If anyone is interested, I can try to find it.

I learned how to bevel edges on square steel tubes. Not bad for someone who has never run a metal grinder before.

What we do when we are at the peak of tomato production is to juice them with our Champion juicer or our Victorio strainer (like a Squeezo) and make juice. My wife and I can do about 2 bushels in the morning before work if they are all sorted and just need to be cut up and run through the juicer into 2 five gallon stainless steel kettles. Then we bring them to a boil, and when we go to work we turn them down to a low simmer and I put them in jars and water bath them for 10 minutes when I get home from work. We do whole canned tomatoes or dried tomatoes when the supply is less and is easier to deal with. Of course we are just dealing with our own production from 50 or so plants.

Thirty pounds down, 150 to go. Smile Well, almost anyway. I didn't get started on the tomatoes till almost 3:00 this afternoon, but I've made a good start. I peeled, cored and quartered 30 pounds, ran them through the food mill, and have added the stuff to make those tomatoes into spaghetti sauce (onion, bell pepper, garlic, oregano, parsley, salt and pepper). It's on the stove cooking down now. I'll probably turn it off and go to bed soon, and let it finish cooking tomorrow when I can keep a closer eye on it to stir it so it doesn't burn. Then I'll can it up.

While I was at the tomato farm today, I found out they grow peppers, too. So, I bought 10 pounds of jalapenos to make salsa. How disappointing. They have no "hot" whatsoever. We had some with dinner, and honestly they were more like banana peppers than jalapenos. They look beautiful, but there's just no heat in them. I had planned to make salsa tomorrow, but now I have to get some more hot peppers first. I guess I can make another batch of spaghetti sauce. It's not too difficult. Obviously I have enough tomatoes to wait a day or two on the salsa Smile.

I may well end up freezing some of them, if I can't get them all done by tomorrow evening. We have company coming in for the weekend and I really don't want the kitchen covered in tomatoes during their visit. I'm going to knock out what I can till then, though. That, and get the house done, finish the laundry, take care of the critters, keep up with the kids...

...this time of year just wears me out.

I learned that 6 Marionberry plants, two years after planting, will have your neighbors making sure their windows are shut and doors are locked, ala zucchini. Rolling Eyes

Seriously, I can't believe how many berries these plants produce and they don't take up a lot of space! I picked 2 gallons just today! These berries provide all sorts of great health benefits:

Picked up corn and wheat at the feed store, 100# total was less than $22. Had a few small pieces of cob or stalk, but nothing I can't remove easily. Put them in Mylar, sealed them up. As these are the first whole grains in volume I've bought, I'll be using them first (lots of experimenting to do) , so I skipped the oxygen absorbers. They won't have time to get funny on me.

If you have not worked with filling and sealing mylar bags, you should know that opening a can of soup is about the same level of difficulty. I used a cup for a scoop and a clothes iron set on high to seal the bags. If you can spell your initials, you can figure out the mylar bag sealing procedure. Greater complexity would be found in pouring water out of a boot with the instructions written on the heel. It is easier than sneezing in a dust storm.

Today I broke the snail barrier, that means I’ve been able to eat cooked snails again, something I didn’t do since my childhood.
Just a week ago when I was cleaning up the food garden I found hundreds of snails eating up all my crop, they were everywhere! I picked them up and throw them very far away, but something kept me ticking, I had eat them before and hey, they’re a great source of protein or fat, or something important for one’s diet. So today when I saw a plate of cooked snails with tomato and onion at my mother’s in law I said to myself “come on dude, you’ve got to do it, it’s free protein for the body, snails are everywhere to be found” So I ate it thinking about the many I had eaten before as a kid, and it was good, quite strong flavor, but good.

Here's some tips on preparation. You've got to get rid of the poo before eating them:

Mercurygirl-I think a recipe/cooking thread would be really great. When I have been canning and cooking at home, I'm always thinking about if I had a wood stove what would I have to do different, etc. My kitchen is still invaded with tomatoes-tonight I'm at it again. I didn't get much done last night because my son spent the previous night with our friends that run a CSA farm and we picked him up which gave me lots of time to pick their brain on gardening topics and play/cuddle with their little bottle lamb.

Thanks for the food thread. I am about to finish the tomatoes (I'll probably finish up after 2 am) it looks like I'll end up with 48 quarts. We still have a bunch in our garden to pick. I think the rest of the tomatoes that come in I'm going to cook them up as spaghetti sauce and freeze all of it in meal size containers.

Snails are a higly appreciated food here in Catalonia, you can have them at most restaurants served in a variety of ways (with special sauce). To prepare them, you have to let them purge themselves for some hours. Personally, I do not like them.

Managed to get several tree lines prepped for my home orchard today. Sowed them down to oats. I've posted a photo and more info on my blog.

Did all that with the flu! Which I'm very annoyed about contracting -obviously originating from the electrician who visited the other day.

I don't have time for such things! Evil or Very Mad
