Why are all oats sold for human consumption toasted?

I was told horse oats are raw, but oat groats, hulled oats and rolled oats are all toasted.

Sterilzation reasons? Reduce cooking times? Not real sure.

If your looking for non toasted oats I would check Honeyville Grain

To my understanding, it makes hulling much easier, and lowers the moisture content, giving greater shelf life.

Heating oats and steaming them help with removing the husks and in softening the oat so it can be rolled easier with less crumbly results. You can roll raw oats, but they don't get as thin or uniform.

If they are not ground or rolled, they tend to pass through the digestive system of the animal (or person) intact, like roughage.
