"Third wave" Coffee
Caffe Pascucci Italian Coffehouse Opens First U.S. Location
The "Yogurt Cappucino," for example, layers a thick tangy yogurt mousse, fruit, chocolate and/or caramel sauce and whipped cream over one espresso shot.

Ristretto | First Look at the Kava Cafe

The bar is equipped with a pair of next-generation Strada espresso machines built by La Marzocco. The Strada, introduced last year, is a rare sighting in the five boroughs: these are just the second and third in New York. (The city’s first is found at the new coffee bar in the Whitney Museum of American Art.)

Intelligentsia Broadway Coffeebar

To go to Intelligentsia these days is to watch as they circle cones of freshly ground, single-origin beans with Japanese kettles, coffee passing drip by drip through the filter, yielding individual cups of coffee whose distinctive flavor profiles are worth waiting for.

Hacienda Esmeralda Special Coffee

In 2004, a unique variety of coffee known as Geisha was discovered on a corner of the Hacienda Esmeralda Farm in Boquete, Panama. The farmers entered Geisha into Panama's national competition, where it not only won but fetched more at auction than any coffee in history. 12 oz ... $40

It's about Starbucks and it's ilk (and there are far to many Starbucks clones out there) passing into obsolescence as a third wave arrives.

There's more than one way to enjoy some joe

Brewing a cup or pot of coffee can be as simple as flipping a switch on the Mr. Coffee or as sublime as taking the time to hand pour a drip.

The latter method is what Isaia refers to as the "third-wave" of coffee enjoyment.

"Years ago we simply brewed a pot of coffee, probably percolated. Then Starbucks and chain coffeehouses became popular with espresso machines offering foamy cappuccinos and milky lattes along with flavored coffee drinks. Now we're paying more attention to quality, sustainability and attention to detail," says the roaster. "People want to be educated about where the beans come from and what method of roasting is used."

Was really hoping this was going to be about the Mighty Mighty Bosstones or Reel Big Fish. Bummer.

Behind the bean

Corporate coffee has come a long way since the days of harsh heaters and burnt coffee. Tim Hortons has given way to Starbucks, which is now ceding ground to the third wave of coffee, a movement focused on producing high-quality java.

I question the direct relevance of coffee in the context of PO, but it interests me, anyway. I am a roaster and am familiar with much of the discussion that would otherwise be dismissed by others. It's like anything else, really. There is a lexicon, and if you're not exposed to it on a daily basis, it essentially means nothing to you. All that said, i have noticed a discernable rise in bulk wholsesale green coffee prices over the past year, which i personally attribute to the rising costs of shipping. Coffee isn't that much different than any other food product, and all kinds of food prices are rising these days. Hence, local foods are on the rise. LAstly, if anyone would like to send me a pound or two or ten of Geisha, i won't look a gift horse in the mouth. :-D

You can tell it's Baltimore because they spell "smooth" as "Ssmooth" on a $9 item.

I don't like the pretentiousness of the Starbucks type coffee scene. I liked the coffeehouses in Europe, but you know what if something is cool you don't have to blast it from loudspeakers -- it just is.

I'm pretty simple with my fancy coffee.. cappucino is good, and I like cafe au lait. But Dunkin Donuts coffee is good too, even if it ain't hip.

Nonsense. Our main concern here is energy. No? :)

The thought of "peak coffee" fills me with dread...
